Domaine des Salamandres winery

196, Ch Covey Hill
Hemmingford, QC
J0L 1H0

The Estate is located on Covey Hill Road, the backdrop for the Adirondacks, home to the world's last dark mountain salamander.

The soil l is mostly sandy and rests on a rocky bed. Our vines are oriented on a southern hillside full of sunshine and maximum brightness. The vineyard and orchard of Domaine des Salamandres have been certified organic from 2004 to 2010. Since 2011, Domaine has continued to cultivate vineyards with respect for a reasoned culture.

Denise Lavoie and his wife Sylvain decided to settle in the countryside in 2001 with our two daughters, Karelle and Camylle.

Three years later, for our own pleasure and love of good wines, we decided to plant a few vines of different grape varieties: Vidal, Geisenheim, Seyval blanc, Frontenac red and gray. In the spring of 2005, a spring frost destroyed half of the vines we planted and forced us to question ourselves. In 2006, without asking too many questions, we decide to replant vines and launch two feet in the adventure by creating the Domaine des Salamandres. At the 8,000 ceps, we quickly add 300 pear trees Beauté Flamande, Bosc and Bartlett.

995, Grand Rang Saint-Charles
Saint-Paul-d'Abbotsford, Quebec

In 1995 that Martin Laroche met Mylène Gaudette. Both work weekends at La Brasserie La Québécoise and La Boîte à chansons in St-Hyacinthe while studying at the Université du Québec à Montréal in secondary education. The idea of having their own vineyard one day comes from the first years of their life together.

In 2008, Mylène and Martin acquired a 23-hectare estate located on the east side of Mount Yamaska in St-Paul-d'Abbotsford. The Maskoutains moved with their small family to the site of Côteau St-Jacques , cider house well known in the region.

Behind the property there’s a mountain, Mont Yamaska. This provides a degree of protection from spring frost, and it also means that they get a lot of snow. They train the Frontenac low so that in the winter they can cover it with geotextiles, and then cover everything with snow.

After more than five years to build this project, summer 2013 marks the official opening of Domaine Le Grand Saint-Charles . The Laroche-Gaudette thus, with the invaluable help of their families and friends, made the ardent dream of turning fruits into wines and ciders. To mark the kick-off in 2013, Mylène and Martin are participating in the Festival Vins et Histoire de Terrebonne, the Magog Orford Harvest Festival and the Papilla Rendez-vous in St-Hyacinthe.

In the spring of 2014, nearly 2,000 plants of St-Pepin are planted on the estate and in the spring of 2015, the Laroche-Gaudette couple doubles the area of its plantation. This time, 5,500 plants of Vidal, Frontenac gray and Petite Pear are rooted in their soil.

Since the summer of 2015, Domaine Le Grand Saint-Charles is officially part of the Route des Vins de la Montérégie.

Miltonia winery

812 route 203
Howick, Quebec
J0S 1G0

Vignoble Miltonia was founded in 2008 by two passionate winemakers, Yves Beaudin and Isabelle Degongre. With a prime geological location and soil particularly well suited for vine growth, fallow agricultural land was purchased in 2007. Located on a slight slope, on the western side of a hill, the sun’s rays shine on the vine rows (oriented north-south) throughout the day. The land’s sandy loam soil is very rocky, hereby allowing the red shale rocks to absorb heat and transfer it to the vine crops at the end of the day. Following the preparation of the soil for planting, the first Vidal and Seyval grapevines were planted in spring 2008.

Today, the vineyard counts a total of 5000 crops. White grape varieties such as Vidal, Seyval and Frontenac (grey), as well as red varieties such as Frontenac, Marquette and St-Croix are grown. All operations are conducted by the owners, as well as their family and friends who have lent their strong hands in the establishment of the vineyard and winery

The name of Miltonia Vineyard was selected based on the town of Sainte-Cécile-de-Milton. Milton is the word changed to Miltonia. The Miltonia is an orchid.

An agro-economist, Daniel is the great visionary! 25 years ago, he spotted a charming vineyard in this former orchard that had been abandoned for at least 40 years. There he saw the family home and the winery that would be built there, on the mountainside.

An agronomist, Monique is also at the heart of the company. Passionate about nature, gastronomy and wine, she completed a diploma in oenology and viticulture in Beaune, Burgundy.

With rock walls, its vineyards and cellar levels stony mountainside give it a very picturesque European charm. Tous nos cépages sont pourtant bien d'ici : québécois et nord américains.

Our site is unique because of the mineralogical diversity of its terroir, the richness of its oak, maple and walnut forests and its climate, one of the warmest in Quebec. Located on the southern side of the mountain, the panoramic views, the low walls and stony landings, the vines are now 20 years old and give the estate the appearance of a small European vineyard of yesteryear.

Philosophy:

Making wine requires time, know-how and delicacy. It is not a recipe or a process, it is based on an understanding of natural phenomena at each stage.

Here we like to work smoothly, with delicacy. We are looking for typicity, authenticity, we want to make "natural" wines, using the least oenological products. The wine in our glasses must be grape juice!

We only use French oak barrels for our wines. And why not oak chips? First, because we believe in the "true", the traditional, and we are not in a hurry. The role of the oak barrel is much more than adding flavors, it consists mainly in creating a micro oxidation of the wine that adds roundness, flavor and balance of tannins. And why French barrels? Because the tastes brought by these barrels are more delicate: vanilla, caramel, spices (depending on the origin of the oak, the manufacturer, the burning ...)
